Always use Chinese star anise (Illicium verum) — NEVER Japanese star anise (Illicium anisatum), which is toxic and can cause neurological symptoms. Our stars are 100% verified Illicium verum, lab-tested and certified safe for food use. The two species look similar but Japanese star anise has 12-pointed stars (vs 8) and a more intense, bitter aroma.
Store whole stars in an airtight glass jar in a cool, dark place. Whole stars stay potent for 24 months; ground star anise loses 70% of aroma within 6 months. Always grind small amounts as needed. Keep away from direct sunlight and heat sources (not above the stove). The stars should retain their reddish-brown color and sweet-licorice aroma.
